Welcome to Fairhope Chocolate

Hi.  I am Chef Jule, owner and executive chef of Fairhope Chocolate.  Upon graduating from culinary and pastry school, I opened this little, high end chocolate shop, Fairhope Chocolate. Why?  Because I LOVE CHOCOLATE.  But not just any chocolate, I love the good stuff. Years of visiting luxury chocolate shops and bakeries around the world, and, ordering chocolate online, made me think- I can do this here in Fairhope, Alabama.

In my younger days, I was fortunate enough to taste Neuhaus Chocolate from Belgium.  The quality- mouthfeel, taste, superb flavor profiles, beauty- changed my whole perception of the chocolate experience. Neuhaus was founded in 1857, the inventor of the original filled chocolate, and soon became the chocolatiers to the royalty of Belgium.  Historically, this company blazed trails in this new field of chocolatiering- creating the first chocolate box (called a ballotin), creating fillings, and also molding and presenting chocolate in a form never seen before- thus ushering chocolate as we know it into the modern day.  Neuhaus is a gold standard of European chocolate.

To appease the American Palate, I have focused my personal line of in-house made confections, called Fairhope Chocolate (like the name of the shop), more towards the preferences of the southern palate.  FC offers pecan caramel patties (Delights), dipped caramels, caramel apples, southern pralines, peanut brittle, toffee, barks, dipped marshmallows, and many items (oreos, potato chips etc.) that are dipped in chocolate, (and so much more).  I am insistent on using whole heavy cream, sweet cream butter, sea salt, real vanilla, and fresh local pecans.  We further enrich the recipe of all those southern favorites by cooking them in a copper pot, in small batches, over an open flame.  Like grandma used to make!  And we use only the highest quality of chocolate -european (mostly swiss) couveture chocolate.
